A 570 is very quick to set up a head for surfacing, but unless it has the slow speed, the finish may be rougher than desired. OTOH, the slow speed of the 570 is very slow. I have the little brother of the 570, the 530 mini broach. I wouldn't mind an upgrade to a 85B or other machine, but room is very tight in my small shop.

Its action was sort of between that of a flycutter and a very large end mill. I generally used just 3 carbide tipped cutters for machining aluminum and would set the cutters exactly as you suggestlower the cutter head over the mill vise and let the tips of each bit rest on the vise while tightening the set screws. Storm Vulcan, an old line rebuilding equipment manufacturer, sold an adjustable angle plate to bolt to the intake face. The head was then leveled with jacks on the exhaust side. Almost every Bridgeport style mill I have ever checked had to much knee rock to machine an acceptable head surface on a v8 head. Heavier knee mills will work fine.

It's nice to be able CC a head on the machine. easier for angle milling etc. I'm not sure exactly what the wear areas to look for are, but slop in the arm or wear where the rollers ride on the table might be a place to start. A friend has a nice variable speed 85B and gets a pretty good finish with the standard carbide cutter head.

One learning experience I had was trying to mill a head that I had used silicon bronze on. It dulled the teeth on my Storm Vulcan head mill, around a 300 lesson (on of many over the years). So now I surface grind any heads that have Silicon Bronze on the deck or intake/exhaust sides.

I think you are correct that Storm Mfg became Storm Vulcan and they made automotive machine tools, notably head and block surfacing machines that used large grinding wheels, also crankshaft grinders. Don't know if they are still in business as the automotive engine rebuilding business has taken a real downturn because of many factors.

StormVulcan sold an adjustable angle plate to use on their rotary broach for refinishing heads. The intake surface was bolted to the adjustable angle, and jacks were used in the head bolt holes on the exhaust side. A hold down bolt was threaded thru a spark plug hole to help hold down the head.
